STABILITY OF HOME-PRACTISED SOY SAUCE - A SIMULATION STUDY

The stability of soy sauce for both dark soy sauce and light soy sauce by home-practiced has been studied. This study showed that light soy sauce is more stable at both ambient temperature and chilled temperature than dark soy sauce because of high salt content which act as preservative and flavor.
